My year round off season diet is lean, high protein whole foods: chicken, fish (cod, tilapia, salmon, tuna), and egg whites. I use whey protein in moderation and lean beef on occasion. Buffalo is a favorite of mine, but also, I consume that in moderation as well. All of my meats are grilled, broiled or baked.

I'm very particular about my carbohydrates also. I enjoy foods such as yams, brown rice, oatmeal and occasionally naturally sweet fruits such as figs, dates, strawberries, cherries and dried cranberries. This is a very partial list of the foods I consume.

I love salads with dark leafy green vegetables, peppers, mushrooms, onion, and sprouts. I usually have a vinaigrette dressing and occasionally have added blue cheese dressing
(in moderation on a cheat day). I always hold the cheese and bacon. I also am highly moderate in the consumption of breads and very particular. As a rule, I do not eat white bread or rolls. I may have whole wheat or grain breads in moderation. I also like nuts such as walnuts, pecans, and almonds.

I drink a lot of water. I do enjoy coffee, but I drink the half decaffeinated. I also enjoy regular iced teas. I will use Stevia to sweeten, and sometimes if that is not available, I will use the
pink packets.

I'm a firm believer in using natural seasonings or vegetables to season my food (I'm not a big salt eater).

I will generally not eat foods that are highly processed or refined.

One of my favorite treats is peanut butter mixed with REAL fruit spread on a rice cake with a few banana slices. I do not knowingly eat anything with high fructose corn syrup. I am a big label reader when I shop.

One of my favorite cheat foods is Baskin and Robbins Raspberry Cheesecake Swirl low fat ice cream.

I may drink alcohol occasionally and favor the original margarita (not the fruit flavored ones). My intake depends on if it fits into my predetermined caloric intake for the date.

My competition diet depends on where I am weight-wise. Being
at or between 5-10% above contest weight is ideal. Because I stay lean throughout the year, I can become show ready in about 7-8 weeks.

As I mentioned on my training page, I use cardio in moderation and do use it, depending on how well I am burning fat.
